1/2 pound of Bar-S Thick Cut Bacon
1 unpeeled, red potato (cut into 1/2-inch pieces)
1/8 teaspoon of salt
3 tablespoons of water
6 eggs or 1 1/2 cups of egg product
1/2 teaspoon of dried basil or 1 teaspoon chopped fresh basil leaves
1/4 cup of roasted red bell peppers sliced
2 tablespoons of Parmesan cheese (shredded)
Preparation:
-Spray skillet or pan with non-stick cooking spray; put over medium heat
-Add potatoes and a pinch of salt
-Add 3 tablespoons of water, cover and stir frequently
-Cook 5-7 minutes on low until potatoes are softened
-While potatoes soften, cook Bar-S Bacon according to package instructions (do not overcook! Bacon should be soft enough to enjoy with potato-egg mixture)
-Scramble eggs with a whisk in a bowl and add basil and roasted peppers. Pour egg mixing into the pan or skillet with potatoes.
-Add Bar-S Bacon and scramble together until well mixed and cooked through.
-Add as much Parmesan cheese as you like, and enjoy!!
