Enjoy the Cooler Weather With a Fall Picnic Menu

Taking a picnic is a great way to enjoy the cooler weather and watch the leaves fall. Prepare a few food items to make your picnic a success with everyone in your party. Finger foods are ideal for kids eagerly wanting to sit, eat, run around and repeat. Fill your basket with napkins, plastic glasses, cutlery and paper plates. Grab an old blanket or picnic blanket to carry with you. Lay out your blanket, place your basket of goodies on top and prepare to enjoy a feast that delights the senses and fills the belly.

Potato Salad Lunch

This recipe takes about 45 minutes to create 12 servings using 2 1/2 pounds of potatoes, a dozen hard-boiled eggs, 10 baby dill pickles, a small chopped onion, 1 1/2 cups mayonnaise, a tablespoon mustard, a teaspoon dill pickle juice, 1/2 teaspoon sugar, salt, pepper, paprika, half a 16-oz package Bar-S Ham, a 14-oz package Bar-S Turkey and 1/2 pound chopped Bar-S Cotto Salami. Place a large pot on the stove, fill with water and peeled, cubed potatoes. Once boiling, reduce heat and cook covered until tender or about 15 minutes. Drain the potatoes and rinse under cool water. Chop the eggs and onion. Slice the dill pickles. Place the potatoes, eggs, onion and pickles in a large bowl. In a separate bowl, combine the pickle juice, mayonnaise, salt, mustard, pepper and sugar until blended. Toss the dressing with the potato mixture then add the chopped deli meats. Top with paprika and place in a sealable container.

Turkey Ranch Pinwheels

In 15 minutes, you can create this fan favorite with four large soft 12-inch tortillas, salt, pepper, a large sweet bell pepper, one package turkey, an 8-oz package cream cheese, 1-2 tablespoons Ranch powder mix, 1/3 cup shredded sharp cheddar cheese and 1/4 cup diced red onion. Dice red onion and bell pepper then place in a bowl. Mix together ranch powder, sharp cheddar cheese and softened cream cheese in another bowl until smoothly combined. Pour the onion and bell pepper mixture in with the cheeses and mix. Place a tortilla on a flat surface then spread the mixture evenly on the surface. Layer Bar-S Deli Style Oven Roasted Turkey Breast evenly on top of the cheese mixture. Roll the tortilla up tightly then cut into bite-sized portions. Repeat until cheese mixture is complete. Pack in a resealable container and place in the picnic basket to serve later.

Bacon, Chips and Guac

This 20-minute recipe requires the use of the oven, one package bacon and 8-oz bowl premade guacamole. Preheat the oven to 375 F then cut bacon into 4-inch pieces. You can use your favorite Bar-S bacon, whether Thick Cut Bacon, Naturally Hardwood Smoked or Thick-Cut Naturally Hardwood Smoked for this recipe. Place parchment paper on top of a cookie sheet then spread out the bacon pieces in a single layer. Cook the bacon in the oven until crisp or about 10-15 minutes. Once cool, place in a container. Add the container of bacon, a container of guacamole and a bag of chips to your picnic basket for a tasty snack.

Ham Ribbon Platter

In about 25 minutes, you can prepare this tray of finger foods. You need 12 slices Bar-S Smoked Ham (or Black Forest, Chopped or Smoked), 24 party skewers 7-8 inches long, 24 red cherry tomatoes, four baby dill pickles, and an 8-oz block each cheddar cheese and Monterey jack cheese. Cut the meat into 1/2-inch pieces, about eight per slice. Slice the pickles into 1/2-inch pieces. Cube both blocks of cheese. Using a skewer, add a cheese cube, slice of ham, dill pickle, ham slice, cheese cube, ham slice, tomato, ham slice and cheese cube. Alternate cheeses on the skewers. Create a ribbon effect by folding the ham like a fan when placing on the skewer. Serve with crackers.
