Ingredients:

  • 1-20 oz can pineapple chunks, drained
  • 15 jumbo shrimp, deveined
  • 15 slices Bar-S naturally hardwood smoked bacon (2 packs)
  • 1-2 Tbsp butter

  1. If using frozen shrimp, remove from freezer and place in cool water until thaw. Usually 10 minutes. Pat dry with paper towel.
  2. Place a single pineapple chunk inside the curve of each shrimp.
  3. Wrap a slice of uncooked bacon around the shrimp and pineapple and secure with a toothpick. Continue the process for each additional shrimp. Set prepared shrimp aside.
  4. Melt butter over medium-high heat. Make sure pan is evenly coated before adding shrimp.
  5. Add the shrimp to the warmed pan. The shrimp should sizzle on contact.
  6. Cook the shrimp 5-6 minutes, rotating halfway though. Remove from heat when bacon is crispy and shrimp are pink. Serve immediately.
