1. Heat oven to 350 F. Spray a 12-cup medium muffin pan with nonstick cooking spray.
2. Line each muffin cup with 2 ham slices. Spoon 1 tablespoon of cheese into each cup.
3. In a medium bowl, whisk eggs, onion powder, salt, crushed red pepper and pepper until blended. Divide evenly among muffin cups.
4. Bake 20–25 minutes or until eggs are set. Let stand 1–2 minutes. Remove cups and place on a serving plate. Garnish with salsa and sour cream.
