  • 1-1/2 cups uncooked rice
  • 1 package Bar-S Smoked Sausage
  • 1 cup bite sized broccoli pieces (fresh or frozen)
  • 2 teaspoons olive oil or vegetable oil
  • 1 small onion
  • 1/2 green bell pepper
  • 1 clove garlic
  • 1/3 cup milk
  • 1-1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

    1. In a large pot, bring salted water to a boil. Pour the rice in the boiling water and cook per package instructions. While the rice is cooking, add the broccoli to the boiling water and cook for 3 minutes if using fresh broccoli – time may vary for frozen broccoli. Remove broccoli using a slotted spoon and set aside.
    2. While the rice and broccoli are cooking, mince the garlic and dice the green pepper and onion.
    3. Cut the sausage into 1/2-inch thick pieces. Add oil to a skillet and bring to medium heat. When the oil is hot, add the onion and green pepper; cook until the onion is see-through. Add the garlic and sausage, stirring well to keep the garlic from burning.
    4. When the sausage has browned, add the rice and broccoli and reduce heat to medium low. Add the milk and cheese. Salt and pepper to taste and stir well.
    5. Serve directly from the skillet or transfer to your favorite serving dish.
