Ingredients:
- 1-1/2 cups uncooked rice
- 1 package Bar-S Smoked Sausage
- 1 cup bite sized broccoli pieces (fresh or frozen)
- 2 teaspoons olive oil or vegetable oil
- 1 small onion
- 1/2 green bell pepper
- 1 clove garlic
- 1/3 cup milk
- 1-1/2 cups shredded cheddar cheese
- Salt and pepper to taste
Directions:
- In a large pot, bring salted water to a boil. Pour the rice in the boiling water and cook per package instructions. While the rice is cooking, add the broccoli to the boiling water and cook for 3 minutes if using fresh broccoli – time may vary for frozen broccoli. Remove broccoli using a slotted spoon and set aside.
- While the rice and broccoli are cooking, mince the garlic and dice the green pepper and onion.
- Cut the sausage into 1/2-inch thick pieces. Add oil to a skillet and bring to medium heat. When the oil is hot, add the onion and green pepper; cook until the onion is see-through. Add the garlic and sausage, stirring well to keep the garlic from burning.
- When the sausage has browned, add the rice and broccoli and reduce heat to medium low. Add the milk and cheese. Salt and pepper to taste and stir well.
- Serve directly from the skillet or transfer to your favorite serving dish.
