Ingredients:

  • 3 cups Russet Potatoes, peeled and cubed
  • 1 pound Bar-S Smoked Sausage (franks or loops in any variety)
  • 2 cups Half and Half
  • 4 tablespoons Butter
  • 4 tablespoons Flour
  • 1/2 pound Velveeta cheese
  • Dash Salt
  • Dash Pepper
  • 1/2 cup Shredded cheddar cheese
  • 1/4 teaspoon Paprika

Directions:

  • Preheat oven to 350 F.
  • Boil Potatoes in a small saucepan for 10 minutes until they are soft but keep their shape. Strain when finished cooking.
  • Cut sausage into thin slices.
  • Brown sausages in a frying pan for about 10 minutes, or until slightly brown.
  • Place cooked potatoes and sausages into a 9 x 13 casserole dish, evenly spread in the bottom of dish.
  • Over medium heat, use a whisk to mix milk, butter, flour, Velveeta cheese, salt, and pepper in a saucepan. Mix until the consistency is smooth and cheese is completely melted.
  • Pour smooth cheese mixture over the top of potatoes and sausage in the casserole dish.
  • Top evenly with shredded cheese and paprika.
  • Place casserole in the oven and cook at 350 F for 40 minutes, or until the top is golden brown. Serve warm.
