Ingredients:
- 3 cups Russet Potatoes, peeled and cubed
- 1 pound Bar-S Smoked Sausage (franks or loops in any variety)
- 2 cups Half and Half
- 4 tablespoons Butter
- 4 tablespoons Flour
- 1/2 pound Velveeta cheese
- Dash Salt
- Dash Pepper
- 1/2 cup Shredded cheddar cheese
- 1/4 teaspoon Paprika
Directions:
- Preheat oven to 350 F.
- Boil Potatoes in a small saucepan for 10 minutes until they are soft but keep their shape. Strain when finished cooking.
- Cut sausage into thin slices.
- Brown sausages in a frying pan for about 10 minutes, or until slightly brown.
- Place cooked potatoes and sausages into a 9 x 13 casserole dish, evenly spread in the bottom of dish.
- Over medium heat, use a whisk to mix milk, butter, flour, Velveeta cheese, salt, and pepper in a saucepan. Mix until the consistency is smooth and cheese is completely melted.
- Pour smooth cheese mixture over the top of potatoes and sausage in the casserole dish.
- Top evenly with shredded cheese and paprika.
- Place casserole in the oven and cook at 350 F for 40 minutes, or until the top is golden brown. Serve warm.
