Ingredients:

  • Pre-made pizza dough (enough for 1 medium pizza)
  • 2-1/2 cups Bar-S Black Forest Ham or Turkey, chopped
  • 1-1/2 cups shredded cheddar cheese
  • 1-1/2 cups shredded mozzarella cheese

Directions:

  1. Preheat oven to 450 F.
  2. Divide the dough in to eight roughly equal parts, rolling them into balls.
  3. Lightly flour a work surface and roll each ball of dough into small circles roughly 6 inches across (about the size of your hand).
  4. Place chopped turkey or ham in the center of each and sprinkle with cheddar and mozzarella cheese.
  5. Gently fold in half to form a semi-circle. Seal the edges by rolling and pinching the dough from one end to the other. Your pockets should look like mini calzones.
  6. Use a sharp, clean knife to make 3 small slits on the top.
  7. Bake on an ungreased cookie sheet for 12-15 minutes, until the crusts begin to turn golden brown.
  8. To freeze these pockets, allow them to fully cool, wrap tightly in plastic wrap and store in a freezer safe bag.
  9. To reheat from the freezer, defrost in the microwave for 1-2 minutes. Once thawed, reheat in microwave for 30-60 seconds.
