Ingredients:
- 3/4 cup shredded Cheddar cheese
- 9 eggs
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon pepper
- Salsa
- Sour cream
Directions:
- Heat oven to 350 F. Spray a 12-cup medium muffin pan with nonstick cooking spray.
- Line each muffin cup with 2 ham slices. Spoon 1 tablespoon of cheese into each cup.
- In a medium bowl, whisk eggs, onion powder, salt, crushed red pepper and pepper until blended. Divide evenly among muffin cups.
- Bake 20–25 minutes or until eggs are set. Let stand 1–2 minutes. Remove cups and place on a serving plate. Garnish with salsa and sour cream.
