Ingredients:
- 1 box (12 oz.) penne pasta
- 1 package (16 oz.) frozen California mixed vegetable blend
- 1 package (13 oz.) Bar-S Smoked Sausage Loop
- 1 tablespoon vegetable oil
- 2 garlic cloves, finely chopped
- 1 can (14.5 oz.) diced tomatoes in juice
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup finely shredded Parmesan cheese
Directions:
To create smoked sausage pasta, use Bar-S Smoked Polish Sausage or Bar-S Smoked Polska Kielbasa in your penne dish. This easy smoked sausage with pasta recipe is topped off with the addition of vegetables for a filling family dinner.
- Fill a 5- to 6-quart Dutch oven or stockpot two-thirds full with salted water. Heat to a boiling. Stir in penne pasta. Boil gently for 5 minutes. Add frozen vegetables; cook 3 minutes longer or until pasta and vegetables are tender. Drain; set aside 1/4 cup for cooking water.
- Meanwhile, in a 12-inch nonstick skillet over medium heat, cook and stir sausage or kielbasa in oil 5 minutes or until light brown. Stir in garlic; cook and stir 1 minute longer.
- Stir in tomatoes, basil, oregano, salt, pepper and remaining 1/4 cup cooking water. Heat to a boiling. Stir in cooked pasta and vegetables until heated thoroughly. Spoon into a serving dish. Top with shredded Parmesan cheese.
