- 2 boneless skinless chicken breasts (about 12 oz.), cut in 1/2 inch cubes
- 2 tablespoons vegetable oil, divided
- 4 Bar-S Classic Hot Links (about 12 oz.), cut diagonally in 1/2 inch slices
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 3 cups chicken broth
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 tablespoon Cajun seasoning
- 1 cup long-grain rice

- In a 4- or 5-quart Dutch oven or stockpot, cook and stir the chicken in 1 tablespoon of oil for 3 minutes or until chicken is no longer pink. Remove chicken from skillet. Add remaining oil to pan.
- Cook and stir links, celery, onion and bell pepper in oil 5–7 minutes or until vegetables begin to soften.
- Stir in broth, tomatoes and Cajun seasoning; heat to a boiling. Stir in rice and cooked chicken. Cover and simmer 25–30 minutes or until rice is tender.
